The Summer Dinner That’s Saving Us Right Now
Easy, fast, and family-approved: our go-to flatbread pizza night
Summer at our house is a mix of long days, sticky hands, sunscreen smells, and chasing the sun until bedtime. And while I love a good slow moment, dinner usually needs to be fast, flexible, and something everyone will actually eat without protest.
That’s why I’m keeping it simple — and why flatbread pizzas have been our absolute go-to lately.
They’re quick to throw together, easy to customize, and honestly? They feel like a win every single time. Whether it’s a Friday night movie dinner or a “we’ve got 20 minutes before someone melts down” kind of meal, this one shows up for us.
Why Flatbread Pizzas Work for Our Family
Minimal prep: You can have dinner in the oven within 5 minutes
No fighting over toppings: Everyone gets their own to customize
No oven mess: We use naan or store-bought flatbreads — no dough drama
Kid-friendly AND grown-up approved: Because yes, I still want mine to taste good too
They also feel fun. Like dinner doesn’t have to be a chore. Sometimes we’ll set up a little “pizza bar” with toppings and let the kids build their own. It’s nothing fancy, but it’s ours. In this season, that’s enough.
Our Go-To Flatbread Pizza Setup
Ingredients:
Naan or flatbread (1 per person)
Pizza sauce, pesto, or BBQ sauce
Shredded mozzarella cheese
Toppings we rotate through:
Pepperoni or salami
Grilled chicken or rotisserie chicken
Red onion slices
Cherry tomatoes
Pesto drizzle or ranch for dipping
Fresh basil if we’re feeling extra
Step-by-Step Instructions
Preheat oven to 425°F
Lay flatbreads on a baking sheet
Spread with sauce (we usually do one classic red, one BBQ, and one pesto)
Add mozzarella cheese + your favorite toppings
Bake for 8–10 minutes, or until the cheese is bubbly and the crust is lightly golden
Slice and serve — bonus points for picnic-style outside or on the living room floor
Other Quick Summer Meals We’re Loving
Flatbread pizza is our favorite right now, but a few other staples on rotation include:
BLT sandwiches + fruit plates (10 minutes, no stove required)
Sheet pan fajitas with peppers + onions (fast, colorful, and always a hit)
Grilled chicken + pasta salad (cook once, eat twice)
Build-your-own bowls with rice, veggies, and leftover protein
None of it’s fancy. But it’s real. And in this season — that’s what matters.
Final Thoughts: Let Dinner Be Simple
If you’re in a season where time feels tight, kids are hungry before dinner is ready, or you’re just trying to eat without stress — I see you.
You don’t have to make gourmet meals to be a great mom.
You don’t have to impress anyone.
You just have to feed your people — and yourself — with care, intention, and a little creativity.
Flatbread pizzas are saving us this summer. Maybe they’ll save you a little, too.
